The estate
In the heart of the Umbria region lies the magnificent Antinori - Castello della Sala, a vast 200-hectare estate that accurately and authentically showcases the beauty of Italian terroirs and grape varieties.
The vineyard
The region of Umbria benefits from a continental Mediterranean climate with hot, dry summers, cold winters, moderate rainfall, and significant temperature variations between day and night. The vines are planted on clay-limestone soils rich in fossil shells, promoting the development of native grape varieties and more widespread varieties.
The vintage
2023 began with a mild winter and little rainfall. A rainier than average spring rebalanced the underground water reserves, delaying bud break and vine growth. Flowering took place at the end of May, followed by fruit set a week later, about seven days behind the seasonal average. From mid-July to August, high temperatures and optimal thermal differences between day and night favored regular maturation. The Chardonnay destined for Cervaro della Sala was harvested at the end of August, offering perfectly ripe, fresh, and aromatic grapes. The Grechetto was harvested in mid-September, three weeks later.
Vinification
Harvesting early in the morning. Skin maceration for a few hours before gravity-fed vatting for decanting and clarification. Fermentations in barrels for the chardonnay and in vats for the cervaro. Blend of the two grape varieties in February in vats before aging in bottles for several months in the historic cellars of Castello della Sala before marketing.

This Cervaro della Sala 2023 from Antinori - Castello della Sala is the result of a blend of Chardonnay (96%) and Grechetto (4%).
