The estate

According to the Roten family, owners of this illustrious 10-hectare estate, it is essential to understand the rhythm of the land to present wines with a formidable symphony of flavours. A symphony today carried on by Olivier Roten, who brilliantly magnifies his grandfather’s legacy.

The vineyard

True to the mountainous landscapes of Switzerland, the vineyards of the Valais are characterised by their steep terraces, with impressive and vertiginous slopes. The diversity of this remarkable environment and the climate that makes it up promise grapes of remarkable ripeness. Indeed, the Foehn, a warm wind from the Alps, plays a major role in the development of the grapes in the Valais vineyards.

Winemaking and ageing

Historically, the wines were kept in barrels made of larch (« mélèze »), a species of tree of the genus Larix. This Valaisan tradition, still applied today by the Caves du Paradis estate, produces distinctive wines, thanks to the influence of sap-rich barrels.
