The property
The House of Bouchard Père & Fils was founded in Beaune in 1731. Accumulating almost three centuries of history, Bouchard Père & Fils is one of the oldest wine houses in Burgundy. At the head of an exceptional estate in Côte d'Or, the 9th generation of the family continues to perpetuate this unique know-how in the art of making great Burgundy wines.
Patience has allowed the vineyard of Bouchard Père et Fils to expand to 130 hectares of vines. Bringing together prestigious appellations with exceptional parcels, the vineyard of Bouchard Père & Fils constitutes a unique viticultural heritage in Burgundy.
The vineyard
The Corton Grand Cru Domaine from Bouchard Père & Fils is made from a 3.20 hectare vineyard located within the historic parcel of the eponymous appellation. Facing east, this terroir rests on stony clay-limestone soils. The only red Grand Cru in the Côte de Beaune, Corton is also the only one divided into sub-climates.
Bouchard Père & Fils owns 60% of the "Le Corton" climate, an exceptional terroir undergoing organic conversion that stands out for a rare feature: it can be planted with both pinot noir and chardonnay.
Vinification and aging
Hand-harvested, the grapes undergo rigorous sorting and total or partial destemming depending on the vintage. Fermentation in small containers. Gentle pressing. Maceration from 15 to 21 days depending on the vintage profile. Aging is carried out for 16 to 20 months in French oak barrels (including 25 to 30% new barrels) in the Bastion cellars of the old Château de Beaune.
