A mineral and powerful white wine from the terroirs of La Clape
The property
The Commanderie de Saint-Pierre la Garrigue, founded in the 12th century by the Hospitallers of Saint-John-of-Jerusalem, is located in the La Clape cru, in Languedoc. The vineyard, extending over 60 hectares, has been managed since 2005 by Comte Jehan de Woillemont, who began its organic conversion in 2018. The varied terroirs, with clay-limestone soils and a strategic exposure, allow the production of wines with a unique identity, reflecting a commitment to environmentally respectful viticultural practices.
The vineyard
Located 40 meters above the Mediterranean, the La Clape vineyard, in the Languedoc, benefits from an exceptional climate with significant sunshine and a notable maritime influence. The Cretaceous clay-limestone soils, scattered with pebbles on the foothills of the cliffs, give the wine its characteristic minerality. The east-facing plots receive the maritime freshness favoring optimal maturation of the berries, while those exposed to the south produce more intense and structured wines. The cordon de royat training system allows to limit yields, thus reinforcing the aromatic intensity and the structure of the wine.
Vinification and aging
After careful sorting and meticulous destemming, the vinification is mainly carried out in stainless steel tanks, with the last third fermented in French oak barrels of 225 and 500 liters. Weekly batonnages are practiced for two months to enrich the texture of the wine. The aging continues for 8 months in barrels, followed by an individual selection of the barrels for the final blend.
