The property
The Domaine du Pas de l'Escalette, founded in 2003 by Julien and Delphine Zernott, covers 22 hectares in the Terrasses du Larzac, in the heart of Languedoc. This estate stands out for its organic and biodynamic farming practices, certified FR-BIO-01 and Biodyvin. The vines, grown on clay-limestone terraces, produce southern grape varieties such as grenache, syrah and cinsault. The wines, praised for their freshness and complexity, perfectly reflect their unique terroir, reinforcing the estate's reputation as a must-see reference in the region.
The vineyard
Located in the Terrasses du Larzac, the vineyard benefits from a particular climate, cooler than the rest of the Languedoc thanks to its altitude. The vines are planted on clay-limestone terraces that give the wines their distinctive mineral character. This privileged geographical location, with significant temperature variations between day and night, promotes slow and optimal ripening of the grapes, thus preserving the aromatic freshness characteristic of the estate's wines.
Vinification and aging
The grapes are harvested manually at optimal maturity. The vinification, guided by a low-interventionist approach, limits interventions to the strict necessary in order to preserve the authentic expression of the terroir. The aging, mainly in tanks, preserves the freshness and purity of the fruit.
