Tasting

Color
Beautiful ruby hue.

Nose
Expressive, the nose exudes fruity, woody and empyreumatic fragrances of licorice.

Palate
Ample and delicate, the palate seduces with its structure and silky touch stretching harmoniously to an aromatic finish.

Food and wine pairings

This wine pairs perfectly with red meats, roast duck or a poultry fricassee.

Service and aging

For optimal tasting, serve between 14°C and 16°C. This cuvée can be kept until around 2035.

The richness and elegance of a Gevrey-Chambertin 1er Cru wine

The property

The Faiveley estate, founded in 1825 in Nuits-Saint-Georges in Burgundy, is one of the largest vineyard owners in the region with about 170 hectares. Currently led by Erwan and Eve Faiveley, this family estate perpetuates a heritage of seven generations, combining tradition and innovation with a new modern winery.

The vineyard

The Clos des Issarts, a monopoly of the Faiveley estate, extends over 0.60 hectare within the Gevrey-Chambertin appellation. This historic plot of Burgundy, established in the 8th century by Charlemagne, benefits from an east/northeast exposure on limestone soils. The vines, planted in 1970 and 2005, are carefully cultivated.

Vinification and aging

The Gevrey-Chambertin 1er Cru "Clos des Issarts" Monopole is made from hand-harvested grapes. After a short pre-fermentation maceration, part of the vinification takes place in wooden truncated vats. The vatting lasts more than 3 weeks, followed by a vertical pressing. The aging continues for 16 to 18 months in oak barrels, two-thirds of which are new, selected for their fine grain and moderate toasting.
