The property
The Domaine Jean-Baptiste Senat, founded in 1995 in Trausse Minervois in Languedoc, extends over 15 hectares of vineyards cultivated organically. Jean-Baptiste Senat is at the head of this family property, supported by his wife Charlotte. The estate stands out for its low-intervention approach and its commitment to authenticity, producing wines that fully express the clay-limestone terroir of Minervois.
The vineyard
The Ornicar cuvée comes from plots located on a typical clay-limestone terroir of Minervois. The vines, grown in traditional goblet style, are particularly old with 50-year-old Grenache and 70-year-old Carignan. This vineyard management, combined with controlled yields of 40 hl/ha, allows for the production of grapes of great concentration and quality, fully expressing the typicity of the terroir.
Vinification and aging
The harvest is entirely hand-picked. The vinification is carried out in whole bunches, thus preserving the integrity of the fruit. The maceration lasts 12 days, allowing a gentle extraction of aromas and tannins. The aging is then carried out in vats, favoring the preservation of the fruit and freshness.
