Tasting
Color
Deep gold with amber reflections, testifying to its long years of maturation in sherry casks.
Nose
Fine and elegant, it reveals a fruity and malty bouquet, enriched with spicy, vanilla and honeyed notes. Oxidative aromas reminiscent of yellow wine mingle with exotic fruits (banana, pineapple). Floral touches evoking buttercup and snowdrop complete this complex nose, enveloped in delicate beeswax.
Palate
Dynamic and proud, it reveals flavors of greengage, mirabelle plum and yellow melon. The slightly sparkling texture is accompanied by lactic (coconut), licorice and menthol notes, with a distinctive touch of tiger balm. The finish, long and suave, unfolds flavors of toffee and fermentative tones reminiscent of the mash, while the retro-olfaction offers notes of candied wax and ginger.
Pairings and tasting moments
This exceptional single malt deserves to be savored alone, in a tulip glass, at room temperature (18-20°C). Adding water (a few drops) can reveal new aromatic dimensions without compromising its structure. Ideal for contemplative moments or special occasions, it will be fully appreciated at the end of the evening.
Other characteristics
Non-peated, this whisky presents a beautiful natural aromatic complexity without the influence of peat. Bottled at its natural strength of 59.7%, without chill filtration, it retains all its richness. The score of 91/100 awarded by WhiskyFun confirms its excellence and exceptional quality.
An exceptional single malt from Speyside, the result of a 27-year maturation in sherry casks
Macallan, the iconic distillery of Speyside
Founded in 1824 by Alexander Reid, Macallan is an iconic Scottish whisky distillery located in Speyside, on the banks of the River Spey. A pioneer in the world of single malt, it has distinguished itself by its meticulous use of sherry casks, which influence 80% of its characteristic aromatic profile. Since its acquisition by the Edrington group in 1999, Macallan has experienced remarkable development, culminating with the inauguration of an avant-garde distillery in 2018, designed by architect Norman Foster. In 2024, as it celebrates its bicentenary, Macallan continues to strengthen its position as a reference in the luxury spirits segment, with limited editions and prestigious collaborations.
Speymalt, the rare expression of a Macallan by Gordon & MacPhail
This Speymalt 27 Years represents the excellence of Gordon & MacPhail's know-how, a legendary merchant founded in 1895 and recognized for its exceptional mastery of the aging of Scottish whiskies. Distilled in 1997 at the Macallan distillery, this single malt has benefited from a 27-year maturation in a second-fill sherry hogshead cask, carefully selected and monitored by the experts at Gordon & MacPhail.
Part of the prestigious "Foundations" collection, this Scottish whisky perfectly illustrates the house's philosophy: to highlight the intrinsic character of the distillate while adding additional complexity through optimal aging. The choice of a second-fill cask allows for a perfect balance between the influence of the wood and the expression of the Macallan distillate.
Bottled in 2024 at its natural strength of 59.7%, without chill filtration or coloring, this Speymalt offers an authentic and preserved experience. With only 140 bottles available worldwide, this limited edition represents a rare opportunity to discover a venerable aged Macallan, interpreted by one of Scotland's most respected independent bottlers.
