The vineyard
Almutia by Xavier Vignon is a Châteauneuf-du-Pape wine white wine made primarily from black and white grapes from vineyards located west of the appellation on limestone soils, but also from a multi-vintage approach to develop the complexity of this wine.
The wine
"Almutia", the name of this cuvée refers to the Latin name of the almuce, a purple hooded headgear used in the Middle Ages as a cape by ecclesiastics to hide their whiteness.
Vinification and aging
Deliberately early harvest. Destemming and crushing before vatting. Draining is followed by a long settling for several days to sediment the pigments. No wood aging or stirring to preserve acidity.
