The property
While the history of the Bichot family dates back to 1214, it was in 1350 that they settled in Burgundy. The trading house created in Monthélie in 1831, under the impetus of Bernard Bichot, experienced a rapid rise during the 19th century, becoming notably the official supplier to the Court of Sweden. An independent and family-owned house, Albert Bichot is one of those great names that mark the viticultural landscape and the influence of Burgundy wines. Today, the 6th generation has been running the company since 1996, harmoniously blending modernity with family tradition.
The Albert Bichot house is today at the head of more than 100 hectares of vineyards, spread from north to south of Burgundy, and grouped into 6 prestigious estates: the Domaine Long-Depaquit, located in Chablis, in the Yonne, the Domaine du Clos-Frantin and Château Gris, both located in Nuits-Saint-Georges, the Domaine du Pavillon, in Pommard. Dedicated to the wines of Mercurey, it was in 2013 that the Domaine Adélie was bought by Albert Bichot. The estate bears this name in tribute to the first name of Albert Bichot's daughter, born in 2003, thus perpetuating the family heritage, from generation to generation. The beautiful vineyard of the Domaine de Rochegrès in the Moulin À Vent appellation joined the family business in 2014.
The vineyard
Pronounced "Fissin", Fixin is located in the Côte de Nuits, between Dijon and Gevrey-Chambertin. The Monks of Cîteaux, by building the Manor of La Perrière in the 12th century, were the first to perceive the immense potential of this 5-hectare enclosure. This "Clos de la Perrière" Monopole 2017 from Albert Bichot is a Fixin wine 1er Cru from a plot located between 350 and 380 meters above sea level, with a brown limestone type soil and benefiting from a southeast exposure.
Vinification and aging
Harvested manually, the grapes undergo vinification in thermoregulated oak conical vats. The aging is carried out in oak barrels (including 30% new barrels) for 14 to 16 months.

100% Pinot Noir.

Palate
Ample and of great finesse, the palate seduces with its silky tannins and a voluptuousness enriched by a subtle minerality conferred by its original soil. Due to its high-altitude terroir, this wine reveals a freshness that balances the natural maturity of a vibrant fruit. As the tasting progresses, complex aromas of licorice and juniper berry combine with beautiful fruity notes. A wine that is earthy in its structure and airy in its expression.
