Description

The structure and balance of a red wine from Burgundy signed Albert Bichot

The estate

Although the origins of the Bichot family date back to 1214, it was in 1350 that they settled in Burgundy. The trading house was founded in Monthélie in 1831 by Bernard Bichot and experienced a remarkable rise in the 19th century, becoming notably the official supplier to the Court of Sweden. Remaining family-owned and independent, the Albert Bichot house is today among the great references of Burgundy viticulture. Since 1996, the sixth generation has been ensuring the perpetuation of this heritage by reconciling tradition and modernity.

With more than 100 hectares of vineyards spread throughout Burgundy, the house is structured around six prestigious estates. These include the Domaine Long-Depaquit in Chablis, the Domaines du Clos-Frantin and Château Gris in Nuits-Saint-Georges, as well as the Domaine du Pavillon in Pommard. In 2013, Albert Bichot acquired the Domaine Adélie, dedicated to the wines of Mercurey and named in tribute to Albert Bichot's daughter, born in 2003. A year later, the Domaine de Rochegrès, located in the Moulin-à-Vent appellation, completed this exceptional heritage.

The vineyard

Located between Dijon and Gevrey-Chambertin, the Fixin — pronounced "Fissin" — appellation is at the heart of the Côte de Nuits. The Clos de la Perrière, with an area of 5 hectares, was identified as early as the 12th century by the monks of Cîteaux as a terroir of great quality, at the time of the construction of the eponymous manor. The 2017 vintage of this Fixin 1er Cru Monopole signed Albert Bichot comes from vines planted between 350 and 380 meters above sea level, on a brown limestone soil and facing southeast.

Vinification and aging

The grapes, harvested by hand, are vinified in oak conical vats equipped with a thermoregulation system. The aging then takes place for 14 to 16 months in oak barrels, 30% of which are new, bringing complexity and structure to the wine.

Grape variety

This wine is made exclusively from pinot noir.

Characteristics and tasting advice for the Fixin 1er Cru "Clos de la Perrière" Monopole 2017 by Albert Bichot

Nose
The bouquet opens with intense aromas of black cherry, red flowers and wild strawberries.

Palate
The palate, ample and delicate, seduces with silky tannins and a velvety texture. The minerality, inherited from its limestone soil, brings freshness and tension to the whole. This freshness, linked to the altitude of the terroir, balances the natural richness of the fruit. The tasting gradually reveals refined notes of licorice and juniper berry, echoing the fruity brightness of the wine. A cuvée both anchored in the earth by its structure and airy by its aromatic expression.

Food and wine pairings

This Fixin 1er Cru pairs ideally with red meats, small game or fine cheeses.

Service
