An exceptional champagne highlighting the finesse of chardonnay
The property
Since its creation in 1818 by the couple Elisabeth Salmon and Nicolas-François Billecart, the Champagne Billecart-Salmon House has remained independent, preserving for 7 generations the entirety of its know-how and the demand for the quality of its cuvées.
The vineyard
The vineyard of the Billecart-Salmon House extends from the Côte des Blancs to the Montagne de Reims over nearly 100 hectares. The vines are cultivated and cared for in a traditional way to approach an authentic fruit and reflect the quality of its Champagne terroir.
The wine
The aromatic relief of this Blanc de Blancs champagne is a reflection of the exceptional terroir of the Côte des Blancs. The typicity of this limestone soil is found in the tasting through the alliance between power, freshness and minerality.
Vinification and aging
Vinification in low temperature tanks. The maturation of this Extra Brut champagne is carried out on lees for 5 years in the estate's cellars.
Blend
Chardonnay (100%) from Grands Crus villages of the Côte des Blancs (Avize, Chouilly, Cramant, Mesnil-sur-Oger).

Tasting
Color
Fine foam and delicate bubble. Golden robe adorned with golden reflections.
Nose
The nose is indulgent, with brioche notes, fresh butter and white flowers.
Palate
With its controlled complexity, the palate brilliantly highlights the wide aromatic palette of chardonnay. A creamy attack precedes a palate with aromas of meringue, fresh almonds, citron zest and lemony citrus. The balance is perfect between power and subtle mineral notes. The finish, marked by freshness, is persistent and all in elegance.
Pairings
