Tasting
Color
The color of the wine presents a magnificent golden yellow, enhanced by brilliant coppery reflections.
Nose
On the nose, this champagne evokes aromas of malted cereals, acacia flowers, broom and orange blossom. Then come roasted notes, toasted bread, blond tobacco and sweet spices.
Palate
On the palate, this 2007 vintage reveals itself in all its splendor: combining structure and roundness, it unveils delicate notes of ripe white and yellow flesh fruits, quince jelly and beeswax before blossoming on a superb minerality.
Service and aging
Serve between 12° and 14°C. This cuvée can wait in cellars for about 10 years.

The property
Since its creation in 1818 by the spouses Elisabeth Salmon and Nicolas-François Billecart, the Champagne Billecart-Salmon House has remained independent, preserving for 7 generations the entirety of its know-how and the demand for the quality of its cuvées.
The vineyard
The vineyard of Maison Billecart-Salmon extends from the Côte des Blancs to the Montagne de Reims over nearly 100 hectares. The vines are cultivated and cared for in a traditional way to approach an authentic fruit and reflect the quality of the Champagne terroir.
The cuvée
Coming from a one-hectare plot of old vines planted in 1964, this Clos meets particularly demanding standards: it is a single plot, enclosed and in one piece.
Vinification and aging
This Blanc de Noirs benefits from a full barrel vinification, a choice that gives it remarkable complexity and structure. Maturation on lees extends over a period of nearly 15 years and the dosage is 1.9g/l.
