Description
The pure expression of a great Blanc de Blancs signed Ruinart
The property
The first Champagne House founded in 1729, Ruinart is an undeniable reference. The historic Ruinart Champagne House owes its birth to the visionary and pioneering monk Dom Thierry Ruinart. Located in the heart of Reims, the Ruinart House guards a treasure. Unique, historical monuments and architectural feats, the Ruinart chalk pits have been classified as a historical site since 1931 and have been listed on the UNESCO World Heritage List since July 2015. Nearly 40 meters underground, in the darkness and coolness of the cathedral-like cellars, the precious bottles wait before coming into the light. Elegance, style and timelessness define the DNA of the Ruinart Champagne House, one of the most appreciated brands in France, embodying the excellence of a French lifestyle around the world.
The wine
Coming from great Champagne terroirs and produced only during exceptional harvests, the Dom Ruinart Blanc de Blancs cuvée, which has only known 26 vintages, highlights the aromatic richness of chardonnay, the emblematic grape variety of the Ruinart House.
The vintage
An atypical vintage in Champagne, the year 2007 was marked by alternating rainy episodes that did not prevent achieving a good maturity of the grapes and a good acidity at the time of the harvests started in August.
Blend
100% chardonnay, the Dom Ruinart Blanc de Blancs 2007 from the Ruinart House is composed of 75% Grands Crus from the Côte des Blancs and 25% from the north slope of the Montagne de Reims.

Tasting
Color
Shining with intensity and a luminous color, the Dom Ruinart Blanc de Blancs 2007 captivates the eye with its shimmering green reflections typical of chardonnay.
Nose
The first nose seduces with its minerality through notes of flint, oyster shell and blond tobacco. The bouquet gains in complexity as it breathes, exhaling subtle fragrances of sap, linden, acacia, extra fresh yellow to green citrus fruits. This nose of great elegance owes its uniqueness to its rich and complex aromatic palette, harmoniously blending floral notes, soft citrus (citron), stone fruits (peach, yellow plum) and ripe white fruits.
Palate
A creamy attack precedes a palate that ideally expresses the terroir of this champagne. Supported by a vibrant tension, the palate reveals intense notes of green citrus and grapefruit up to a persistent finish combining a delicate sapidity with an elegant bitterness as well as tasty chalky notes.
Service
For optimal tasting, serve at 10-12°C.
Cellaring
This Dom Ruinart Blanc de Blancs 2007 from the Ruinart House can wait several years in the cellar, especially in magnum format, to express all its aromatic richness.
Food and wine pairings
With its structure, precision and freshness, this exceptional champagne ideally pairs with a millefeuille of scallop carpaccio and black radish, a marinade with first press organic olive oil and green citrus fruits or a cod steamed in champagne, powdered with Zhegiang tea, consumed with sea water.
