Tasting
Nose

Palate
The palate seduces with its finesse and vivacity, carried by a beautiful acidity. The fresh and floral aromas gradually open towards elegant nuances of leather, tobacco and undergrowth. This harmonious vintage perfectly reflects the identity of Château Canon, with a racey minerality in the background.
Service and aging
Château Canon 2007 can be served between 16 and 18°C, after an hour of aeration in a decanter to allow the wine to fully express itself.
An exceptional Saint-Émilion with characteristic minerality
The property
Nestled on the limestone plateau of Saint-Émilion, Château Canon has been writing its history since 1760, when the corsair Jacques Kanon became its owner. Acquired by Maison Chanel in 1996, the estate has since undergone extensive restructuring, both of the vineyard and the infrastructure. Classified as a Premier Grand Cru of Saint-Émilion, it has been managed since 2015 by Nicolas Audebert, who is also in charge of Rauzan-Ségla for the Chanel group. Château Canon is now one of the major references of its appellation, praised for the finesse and elegance of its wines.
The vineyard
Spread over 32 hectares, 20 of which are in one piece, the Château Canon vineyard occupies a privileged position on the limestone plateau of Saint-Émilion, facing south/southwest. Located at an altitude of 87 meters, it benefits from excellent natural ventilation, while the ancient walls that border its plots offer valuable protection against spring frosts.
The vintage
The year 2007 was marked by a mild and wet winter, followed by a dry spring with pleasant temperatures in April, then wet from May onwards. The summer was mixed and rather cool, while the autumn was sunny but mild, with cool nights. These conditions allowed a slow and progressive maturation of the grapes, with the harvest taking place from September 27 to October 3 for the merlot and October 3-4 for the cabernet franc.
Vinification and aging
The vinification of Château Canon 2007 is carried out plot by plot, in double-walled, thermoregulated stainless steel vats. The process is entirely gravity-fed, without pumping, to preserve the integrity of the fruit. Malolactic fermentation is carried out for a third in new barrels and two thirds in vats. The aging extends over 18 months in French oak barrels with medium or medium-long toast, 50% of which are new wood.
Blend
Château Canon 2007 is composed of 75% merlot and 25% cabernet franc.
