An exceptional Saint-Émilion with a mineral and silky character
The property
Nestled on the limestone plateau of Saint-Émilion, the Château Canon has been writing its history since 1760, when the corsair Jacques Kanon became its owner. Acquired by Maison Chanel in 1996, the estate has since undergone a vast restructuring, both of the vineyard and the infrastructure. Classified as a Premier Grand Cru of Saint-Émilion, it has been managed since 2015 by Nicolas Audebert, who is also in charge of Rauzan-Ségla for the Chanel group. Château Canon today embodies one of the major references of its appellation, praised for the finesse and elegance of its wines.
The vineyard
Extending over 32 hectares, of which 20 are in one piece, the vineyard of Château Canon occupies a privileged position on the limestone plateau of Saint-Émilion, facing south/southwest. Located at 87 meters above sea level, it benefits from excellent natural ventilation, while the ancient walls that border its plots offer precious protection against spring frosts.
The vintage
The year 2008 was marked by a very dry winter with beautiful sunshine, followed by a mild and humid spring. The summer proved pleasant, punctuated by showers. The fall, characterized by beautiful thermal amplitudes and light showers, allowed for optimal ripening of the grapes. The harvest took place from October 4 to 8 for the Merlot and October 9 and 10 for the Cabernet Franc, under excellent conditions.
Vinification and aging
For the Château Canon 2008, the vinification is parcel by parcel with gravity filling in double-walled, thermoregulated stainless steel truncated vats. The flow is also by gravity. The malolactic fermentation is carried out for a third in new barrels and two thirds in vats. The aging extends over 18 to 20 months with 80% new French oak barrels with medium or medium-long heating.
Blend
The Château Canon 2008 is composed of 75% Merlot and 25% Cabernet Franc, reflecting the traditional varietal composition of the estate which includes a total of 70% Merlot and 30% Cabernet Franc.
