The estate

Located on the heights of Saint-Mathieu de Tréviers, at the foot of the majestic Pic Saint-Loup, the Ermitage du Pic Saint-Loup estate – renamed theHeritage of Pic Saint-Loup from the 2021 vintage – embodies one of the major figures of Languedoc viticulture. At its head, the three Ravaille brothers, Jean-Marc, Pierre and Xavier, work together to make their terroir shine through cuvées of great depth.

Their philosophy is based on a biodynamic approach to vineyard work, banning pesticides and favoring soil plowing. This respect for life gives the wines of the estate an authentic signature, praised for its ability to express one of the purest identities of Languedoc.

The vineyard

The estate's vineyard extends over a real mosaic of terroirs, composed of hard and soft limestones, dolomites, conglomerates, river-origin scree and marls. This geological diversity, combined with a unique climate – characterized by rainy winters, dry summers and large temperature ranges between day and night – allows a slow and balanced maturation of the grapes. What is often referred to as "the climatic singularity of Pic Saint-Loup" shapes the unique character of these Languedoc wines, vintage after vintage.

The wine

Guilhem de Gaucelm is a Pic Saint Loup wine made from old Grenache and Syrah vines, carefully selected for their ability to translate the richness of the terroir and the finesse of their maturity.

Vinification and aging

This exceptional cuvée benefits from a long aging in foudres, from 24 to 30 months, allowing the wine to develop structure, elegance and aromatic complexity.

Blend

This Guilhem de Gaucelm 2020 from Heritage of Pic Saint-Loup is the result of a blend of Grenache and Syrah.
