The estate

Overlooking the hills of Saint-Mathieu de Tréviers, at the foot of the majestic Pic Saint-Loup, the Ermitage du Pic Saint-Loup – which became the Heritage of Pic Saint-Loup from the 2021 vintage – stands out as one of the flagship estates of Languedoc. At the helm, the Ravaille brothers, Jean-Marc, Pierre and Xavier, share a common passion for their terroir, which they express through cuvées of great intensity.

Staunch defenders of environmentally friendly viticulture, they cultivate their vines according to the principles of biodynamics, without the use of pesticides and with particular care given to soil work. This demanding and sincere approach gives birth to deep wines, imbued with authenticity and energy.

The vineyard

This Languedoc estate rests on a fascinating mosaic of terroirs: hard and soft limestones, dolomites, conglomerates, marls and river-origin scree. This geological patchwork, combined with a unique climate – sufficiently rainy winters, dry summer, large temperature differences between day and night – creates the ideal conditions for a slow and balanced maturation of the grapes. This rare combination shapes what is called the climatic singularity of Pic Saint-Loup, an immutable signature of the territory, regardless of the vintage.

The wine

The cuvée Guilhem de Gaucelm embodies the noblest expression of the Pic Saint-Loup terroir. Made from old Grenache and Syrah vines, it stands out for its depth, finesse and ability to accurately translate the richness of the soil and the purity of the fruit.

Vinification and aging

The wine is aged in foudres for 24 to 30 months, a long and controlled time that allows the development of a complex aromatic framework, a silky structure and great elegance.

This Guilhem de Gaucelm 2021 from Héritage du Pic Saint-Loup is the result of a blend of Grenache and Syrah.
