The estate
Taken over in 1996 by the Devillard family, Domaine des Perdrix stands out as one of the most beautiful properties on the Côte de Nuits. Today at the head of a 15-hectare vineyard with more than half classified as Premier Cru and Grand Cru, the property watches over the exceptional terroirs of Vosne-Romanée, Nuits-Saint-Georges and Nuits-Saint-Georges “Aux Perdrix” Premier Cru, a virtual monopoly. Owners of a 1.14 hectare Échezeaux Grand Cru plot, the Devillards enjoy a diversity of extremely rare terroirs, especially bearing in mind that Burgundy only has 33 Grand Crus.

Domaine des Perdrix holds 99% of the Premier Cru plot "Aux Perdrix," making this gem a near-monopoly.
The vineyard
This Burgundy wine comes from a 3.45-hectare vineyard, whose vines were planted between 1922 and 1980. By its convex shape and its south-east and gently sloping exposure, as well as by its predominantly clayey limestone soil, this terroir enjoys a privileged location.
Winemaking and ageing
This Nuits-Saint-George wine is the result of expert work in the vineyard and in the cellar: to guarantee quality, the grapes are carefully harvested and sorted by hand. Whole harvest vinification is then carried out, preceded by a pre-fermentation cold maceration of 4 to 6 days. A 15-day maceration follows, with punching down without pumping over. Fermentation is then carried out with indigenous yeasts. The press and free run juices are then carefully separated and matured separately. Finally, the wine is aged for 16 months in oak barrels.

Colour
The wine has a deep ruby colour.
Nose
The nose unveils notes of ripe red fruit, spices and licorice, accompanied by subtle woody hints.
Palate
The palate has a lovely structure, underpinned by pronounced, silky tannins. It mingles aromas of red fruit and spicy notes, presenting a long and lingering finish.
To serve
For the best tasting, the wine should be served between 15 and 17°C.
