A Burgundy red wine that delights with its freshness and balance
The estate
The Domaine du Cellier aux Moines was founded in 1130 by the Cistercian monks of the Abbey of La Ferté. These monks were the first to build the famous Clos de Bourgogne. Since 2004, the Pascal family has been successfully restoring and revitalising the estate, with a completed conversion to biodynamic viticulture.
The vineyard
Clos Pascal Monopole 2017 from Domaine du Cellier aux Moines is a Givry wine made from 30 ares of south-facing terroir. The vines are grown between 300 and 310 metres above sea level on shallow clay-limestone soils. Since 2017, Domaine du Cellier aux Moines has implemented sustainable viticulture based on biodynamic principles.
The vintage
The year was marked by sunshine and high temperatures from spring to summer. Flowering took place under optimal conditions. The use of biodynamic viticulture enabled the vines to find their balance. The occasional spells of rain were favourable for ripening the grapes.
Winemaking and ageing
Gentle vinification by infusion. Vatting for a week at low temperature with spontaneous fermentation. The 3-week vinification is followed by ageing in oak barrels (50% of which are new). The wine is aged for 18 months in oak barrels, then in vats for 30 days.

Nose
The nose entices with its floral bouquet, releasing fragrances of rose and peony.
Palate
Elegant and with a wonderful freshness, the palate reveals silky tannins. Its fleshy structure and balance draw out to a lingering finish.
