The estate
Voted France's Best Young Sommelier at the age of 21, Hervé Bizeul fell in love with the fairytale landscapes of the majestic Cirque de Vingrau, at the foot of the Pyrénées Orientales in the Roussillon region. A restaurateur, writer and passionate about the land and the vines, Hervé Bizeul founded the Domaine du Clos des Fées with his wife in 1997.
Over the years, Domaine du Clos des Fées has become a benchmark among the finest wine labels in Roussillon. Expressing the unique character of their terroir of origin, these exceptional cuvées delight with their intensity and balance, while offering great ageing potential.
The vineyard
Là Où Le Soleil Se Lève 2020 is a Roussillon wine made from the arid, steep slopes of the Cabrils vineyard in the commune of Tautavel.
Resting on soils composed of red and black clays, the vines that produce this IGP Côtes Catalanes wine benefit from deep roots and regular hydration.
Winemaking and ageing
The grapes, harvested at optimum ripeness, are partially destemmed before undergoing a short pre-fermentation cold maceration. Fermentation with indigenous yeasts accompanied by gentle punching down and moderate pumping over. Short vinification. Aged in 100% new fine-grained Burgundy barrels.

Tasting
Colour
The wine has a shining, ruby colour that is almost the shade of a poppy.
Nose
Complex and elegant, the nose combines ripe, crunchy red fruit with herbaceous notes. With a hint of smoke and wood, it gives off a bouquet of blackberry jam mixed with aromas of peony and wild raspberry.
Palate
Elegant and dense on the palate, it is intense and tightly wound, with notes of smoked beech. It is distinguished by the extreme finesse of its tannins, giving it a refined texture. On the palate, the finish is persistent, slightly bitter and acidic, giving it great balance.
Food and wine pairing
This wine is ideal with dishes such as rabbit liver terrine, veal sweetbreads with shallot confit, pigeon pie with morel mushrooms or roasted duck breast.
