The estate
Voted Best Young Sommelier of France at the age of 21, Hervé Bizeul fell in love with the fairytale landscapes of the majestic Cirque de Vingrau, at the foot of the Pyrenees Orientales, in Roussillon. Restaurateur, writer and passionate for land and vine, Hervé Bizeul founded Domaine du Clos des Fées with his wife in 1997.
Over the years, Domaine du Clos des Fées has become a major name among the finest wine labels in Roussillon. Expressing the singularity of their terroir of origin, these exceptional vintages delight with their intensity and balance while having a great ageing capacity.
The vineyard
A major name among the great Roussillon wines, Domaine du Clos des Fées oversees a 30-hectare vineyard spread across 112 plots on a real mosaic of soils run in a sustainable manner.
The wine
Un Faune Avec Son Fifre 2017 from Domaine du Clos des Fées is an IGP Côtes Catalanes wine produced from 50 ares of 15-year-old vines grafted on in 2006 by the estate (cleft grafting) with massal selections of Semillon.
Winemaking and ageing
Harvesting by hand. Storage in new 500 litre demi-muids. Long fermentation. Ageing on the lees for 12 months in the same containers with monthly stirring. Resting in vats for 6 months before bottling.

Tasting
Colour
The wine is shining, with an intense golden colour.
Nose
The nose is complex and original, releasing scents of beeswax, saffron, warm apricot jam and bourbon vanilla.
Palate
Powerful and dense, the palate has an extreme concentration and a fine controlled oxidised touch. The finish is lingering and slightly tannic.
Storage
This wine can be laid down until around 2026 to release all its aromatic nuances.
To serve
It is recommended to decant the wine two hours before serving at 12°C.
Food and wine pairing
This Roussillon white wine pairs marvellously with hard cheeses or a Vacherin du Mont-d’Or cheese. It goes ideally also with chicken with morille mushrooms, a piece of veal or fish cooked in saffron.
