The property
The Domaine Les Hautes Terres is located in the village of Roquetaillade, nestled in the Haute Vallée de l'Aude, in Languedoc. Founded in 1999 by Gilles Azam, later joined by Geneviève, this estate was born from a life project and a unique vision of wine. Together, they have built a place where tradition and authenticity blend to offer wines imbued with character and elegance. The estate draws its essence from the singular terroir of Roquetaillade, marked by geological formations from the Eocene sea, witnesses of a millennial history engraved in each glass.
The vineyard
The vineyard of Les Hautes Terres benefits from an exceptional terroir, sculpted by the erection of the Pyrenees and the Atlantic and Mediterranean climatic influences. This climatic contrast creates unique wines, where each plot, depending on its exposure, is distinguished by dry garrigue or humid undergrowth. The marl and limestone soils, dotted with fossils, bring a mineral complexity to the wines. The cultivated grape varieties, including chardonnay, mauzac and chenin, capture this singularity, producing wines as alive as the landscape that surrounds them, revealing all the power of the Limoux terroir.
The wine
The cuvée "Joséphine" from Domaine les Hautes Terres is a sparkling wine from Languedoc made from plots located within the Cirque de Roquetaillade, between 450 and 600 meters altitude on soils composed of clay and sandstone.
Vinification and aging
Elaboration on lees for 9 months. Aging on laths for 24 months. Disgorging without addition of expedition liqueur.
Blend
Chardonnay, chenin and Mauzac.
