The property
The Domaine René Bouvier, founded in 1910 in Marsannay, covers 30 hectares in Burgundy, mainly in the Côte-de-Nuits. Currently led by Bernard Bouvier, representing the third generation, the estate has experienced significant expansion, notably with the acquisition of prestigious vineyards. Since 2009, it has practiced organic viticulture, certified since 2013, and uses traditional and innovative methods in winemaking. The estate is recognized for the quality of its wines, especially its pinot noirs.
The vineyard
The Gevrey-Chambertin 1er cru "Les Champeaux" is a Burgundy wine from a vineyard located in the northern part of the appellation, on the top of the north slope. This 0.22 hectare plot, planted between 312 and 349 meters above sea level (average of 328 meters), benefits from an east exposure with an average slope of 6%. The terroir is exclusively made up of entroque limestones, with clay-loam soils rich in limestone stones. The vines, with an average age of 65 years, come from mass selections.
Vinification and aging
Hand-harvested and then sorted on a table, the grapes selected for the production of this Gevrey-Chambertin 1er cru "Les Champeaux" undergo gravity vinification in thermo-regulated vats, with about 50% whole bunches (variable proportion depending on the vintage). Fermentation is carried out with indigenous yeasts, favoring an infusion approach rather than mechanical extraction. Only the first press juices are kept. The aging lasts about 18 months in oak barrels, 20% of which are new. Bottling is carried out with a minimum of SO2, following the lunar calendar.
