Passito di Pantelleria Wines : Key Points

The wine produced under the DOC Passito di Pantelleria is exclusively produced on the island of Pantelleria, in the middle of the Sicilian Channel in Italy. Generally, Passito di Pantelleria is a white, sweet wine made from Zibibbo (Muscat of Alexandria).

To develop such a wine, the island's producers use the passerillage technique, or passito in Italian. After harvesting the well-ripened grapes, they are exposed to the Pantelleria sun to lose water and increase their sugar concentration. This traditional technique means that the quantity of grapes used is two to three times greater than in the production of a classic wine. The vinification of this special wine of Passito di Pantelleria takes place in the estates’ casks for 12 to 24 months.

These sweet wines have a golden yellow colour with amber highlights. The aromas are delicate and fine, tending towards candied fruits, honey and spices. Fresh, velvety and fruity, the full potential of a dessert wine is revealed.
