Discovering an intense and seductive champagne
The property
Since its creation in 1818 by the couple Elisabeth Salmon and Nicolas-François Billecart, the Champagne Billecart-Salmon House has remained independent, preserving for 7 generations the entirety of its know-how and the demand for the quality of its cuvées.
The vineyard
The vineyard of the Billecart-Salmon House extends from the Côte des Blancs to the Montagne de Reims over nearly 100 hectares. The vines are cultivated and cared for in a traditional way in order to get closer to an authentic fruit and reflect the quality of the Champagne terroir.
The wine
This Vintage 2009 from the Champagne Billecart-Salmon House is made from 73% Grands and Premiers crus from the Montagne de Reims, the Côte des Blancs and the Vallée de la Marne. Its dosage is 2 g/L.
Vinification and aging
This vintage champagne 2009 is aged for 9 years in the coolness of the chalk cellars.
Blend
The blend of this Vintage combines 3 characteristics unique to the Champagne terroir, namely the body and power of pinot noir (40%), the finesse of chardonnay (33%) and the delicate notes of white fruits of pinot meunier (27%).

Finely effervescent, the golden yellow color presents beautiful golden reflections.
Nose
The gourmet and fresh nose presents a rich taste palette mixing citrus and nutty aromas (grapefruit flesh, slivered almonds) with pastry and buttery notes (raw butter, white fruit jelly).
Palate
Charming and structured, the palate is tense and balanced. Chestnut cream, fresh blueberries and Breton shortbread are all flavors mingling up to a persistent and all in finesse finish..
Pairings
The noble and delicate character of this cuvée will deliciously pair with red tuna or even pan-fried foie gras.

To be served at cellar temperature: 11/12°. This exceptional champagne can be stored in the cellar between 8 and 10 years in bottle format and more than 10 years in magnum.
