Description
An aromatic and mineral white wine from Burgundy
The estate
Passionate about viticulture and winemaking, Olivier Merlin acquired in 1987 with his wife the Domaine du Vieux Saint-Sorlin, located a few kilometers from Mâcon, with the intuition that this vineyard can produce great Burgundy wines, and renamed it Domaine Merlin.
Defining themselves as "wine artisans", Olivier and Corinne Merlin pay particular attention to both the vineyard (specific soil work according to the plots, addition of organic fertilizer to promote microbial life, manual harvests) and the winemaking (long pressings in whole bunches, fermentations and aging in oak barrels), in order to produce exceptional cuvées that authentically express the specificities of this historic terroir.
With an area of 22 hectares, the vineyard is composed of chardonnay, pinot noir and gamay. Since 2017, Olivier and Corinne Merlin have been joined by their two sons, Théo and Paul, who have experience in international wine estates.
The vineyard
This Pouilly-Fuissé Village Chevrières 2018 from Domaine Merlin comes from vines in the commune of Chaintré, at an altitude of 250 meters, facing west. Averaging 75 years old, the vines are planted on clay-limestone soil containing a significant amount of iron oxide.
Vinification and aging
Harvested manually, the grapes are then pressed in whole bunches. The alcoholic and malolactic fermentations are carried out in oak barrels, as is the aging for a period of 18 months. Before bottling, racking and a light filtration are performed.

100% chardonnay.
