Description
The complexity and freshness of a white wine from Burgundy
The estate
Driven by a true passion for viticulture and the art of winemaking, Olivier Merlin acquired in 1987, with his wife Corinne, the Domaine du Vieux Saint-Sorlin, a few kilometers from Mâcon. Convinced of the potential of this terroir to reveal great Burgundy wines, they renamed it Domaine Merlin.
Defining themselves as true "wine artisans", Olivier and Corinne Merlin cultivate a rigorous and respectful approach to nature. In the vineyard, they favor soil work adapted to each plot, the addition of organic fertilizers to stimulate microbial life, as well as manual harvesting. In the cellar, their philosophy is reflected in long pressings in whole bunches, fermentations and aging in oak barrels, in an approach aimed at preserving the authenticity of the terroir and producing exceptional cuvées.
The estate now extends over 22 hectares, planted with chardonnay, pinot noir and gamay. Since 2017, their two sons, Théo and Paul, having gained international experience, have joined the family adventure.
The vineyard
The Pouilly-Fuissé Village Chevrières 2018 cuvée comes from vines located in the municipality of Chaintré, at 250 meters altitude, facing west. About 75 years old, these old vines take root in a clay-limestone soil rich in iron oxide, giving the wine structure and minerality.
Vinification and aging
The grapes are hand-picked and then gently pressed whole. The alcoholic fermentation, followed by the malolactic fermentation, takes place in oak barrels, as does the aging, which lasts 18 months. Before bottling, careful racking and light filtration are carried out.

100% chardonnay.
