Nicknamed “Boll” by those from Champagne and “Bolly” by the English, the timeless and legendary Bollinger Champagne House forms part of a small circle of three great Champagne houses. Bollinger champagne’s style is defined through its remarkable precision, which is brought to every moment of production. With a respect for tradition, riddling done by hand, natural corks for magnum reserve bottles and the last permanent cooper in the region, excellence has symbolised Bollinger champagne culture since its creation in 1829 Aÿ. More than an art, it is a heritage.
The vineyard
Bollinger's uniqueness comes from its 174 hectares divided into seven main vineyards in Champagne, 85% of which are Grands Crus and Premiers Crus, making the house one of the few to produce its own grapes for its blends. Pinot Noir is the house's signature grape variety and represents 60% of the vineyard's vines.
The wine
In 1979, the prestigious Bollinger Champagne House partnered with James Bond for the 11th film in the Bond saga: Moonraker. To celebrate the 40th anniversary of this faithful collaboration, Bollinger has produced an exclusive 2007 vintage, the Bond vintage par excellence. Bollinger revisits the Moonraker space shuttle thanks to the designer, Eric Barthès, and the Saint-Louis crystal works factory. This pewter box plated with high-quality wood, available in limited edition with 407 units, contains a Saint Louis crystal bucket and a magnum of Bollinger 2007.
Winemaking and ageing
This prestigious cuvée was made from 14 different crus, the Pinot Noirs are from Aÿ to Verzenay and the Chardonnays are from Cramant to Oger. Fermentation was exclusively carried out in barrels, the Bollinger 007 Luxury Limited Edition Moonraker 2007 was aged on lees and under a natural cork stopper for 10 years.

Tasting
Colour
The cuvée’s golden hue are a testament to its maturity, as well as the art of Bollinger’s winemaking.
Nose
Scents of fresh almonds and yellow fruit merge with roasted and grilled notes along with a subtle touch of dried citrus.
Palate
With a subtle chalky texture, the palate mixes notes of candied lemon and beautiful bitterness ensuring great freshness on the finish.
Service
For the best tasting, serve between 8°C and 10°C.

This exceptional champagne can be enjoyed today, and has a tremendous ageing capacity.
