The estate
Nicknamed “Boll” by those from Champagne and “Bolly” by the English, the timeless and legendary Bollinger Champagne House forms part of a small circle of three great Champagne houses. Bollinger champagne’s style is defined through its remarkable precision, which is brought to every moment of production. With a respect for tradition, riddling done by hand, natural corks for magnum reserve bottles and the last permanent cooper in the region, excellence has symbolised Bollinger champagne culture since its creation in Aÿ. More than just an art, it is a heritage.
The vineyard
Created in 2008, Bollinger rosé comprises 85% of Grands and Premiers crus of Champagne, from three plots located in Verzenay (Poirier, Saint-Pierre, Montboeuf). Reflecting Bollinger's constant quest for excellence, these plots are worked with the same dilligence as the emblematic La Côte aux Enfants plot.
Winemaking and ageing
The ageing in the cellar is more than twice the appellation’s required time. The dosage for this Bollinger Rosé champagne is approximately 7 to 8 g/litre.
Blend
Pinot Noir (62%),
Chardonnay (24%)
Meunier (14%).
Only 5 to 6% of red wine added to the blend.
Tasting
Colour
The colour shows subtle golden hues. The bubbles are fine and delicate.
Nose
The nose combines delicious notes of red fruit (redcurrant, cherry and wild strawberry) with a slightly spicy hint.
Palate
Structured and lively, the palate combines good length to a fine sparkle with delicious aromas of wild red fruit.
Food and wine pairing
A perfect apéritif, Bollinger rosé pairs marvellously with a variety of dishes. Langoustine, lobster, salmon, finely spiced Japanese or Asian cuisine or fruit-based desserts (fruit soup, strawberry tart, raspberries) will enhance the aromatic finesse of this Champagne.

For the best tasting, serve between 10° and 12°C.
