The estate
Nicknamed "Boll" by the people of Champagne and "Bolly" by the English, the timeless and legendary Bollinger Champagne House is one of the small circle of great Champagne houses. The style of Bollinger Champagne is defined by the exemplary precision that goes into every step of the winemaking process. Respect for tradition, hand riddling of bottles, corking of reserve magnums, the region's last permanent cooper - this taste for excellence has symbolised the whole culture of Bollinger Champagne since it was founded in Aÿ in 1829. More than an art, it is a heritage.
The vintage
Bollinger owes its uniqueness to its 174 hectares divided between seven major Champagne vineyards, 85% of which are Grand and Premiers Crus, making the house one of the few to produce its own grapes for blending. The house's signature grape variety, Pinot Noir, accounts for 60% of the vineyard.
The wine
A new chapter in Bollinger's study of the expression and origins of Pinot Noir, Bollinger's PN AYC18 Blanc de Noirs Brut is made from illustrious vineyards in the communes of Aÿ, Tauxières and Verzenay. This Bollinger Blanc de Noirs harmoniously combines a base year (2018) with the oldest year, 2009. The dosage is 6g per litre.

The ageing period in the company's cellars is more than twice as long as indicated in the appellation's specifications.

Tasting
Colour
The golden colour reveals subtle bronze highlights.
Nose
During the tasting, delicious fragrances of honey, fruit paste, quince and candied citrus mingle with notes of marzipan and blood orange, as well as refreshing spice (sweet spices) and menthol notes.
Palate
A perfect combination of finesse and aromatic expression, the palate draws out to a finish that delights with its refreshing aromas of candied citrus fruit.
Food and wine pairing
A carpaccio of scallops with citrus fruit, a duck breast with orange or an almond tart with quince are refined combinations with this Brut champagne.
