Château d'Estoublon dates back to 1489, when it was owned by the Counts of Baux.

In 1999, Ernest Schneider, the head of the famous Breitling watchmaking brand, acquired the estate with the ambition of making it a reference among the wines of Les Baux de Provence. Following his death in May 2015, his daughter and her husband Remy Reboul took over the reins of the property. In 2019, Valérie Reboul-Schneider sold 70% of Château d'Estoublon to businessman Stéphane Courbit. Since then, Château d'Estoublon has been managed by the Courbit, Prats (former owners of Château Cos d'Estournel) and Bruni-Sarkozy families.

Château d'Estoublon watches over a 300-hectare terroir, 17 of which are vines and 120 olive groves. The vineyard is managed in a sustainable way and according to the precepts of organic farming.
