Description
A delicate and lively Côtes de Provence rosé wine by Peyrassol
The estate
Founded by the Order of the Templars in the 13th century and then bequeathed to the Order of the Knights of Malta, Peyrassol has made its name over the vintages in the production of great Côtes de Provence wines.
In 2001, Philippe Austruy bought the estate and has continued its ancestral history. In 2002, this enthusiast undertook major work to restructure the vineyard and modernise the wine-making infrastructure, with a view to excel in the production of wines that reveal the quality of their terroir. A series of projects to get the best out of the vineyard have been put in place, including managing the vines organically, sowing cereals between the rows of vines, the development of soil life, plot selection and harvesting the oldest plots by hand.
The vineyard
Château Peyrassol rosé 2022 is a Côtes de Provence wine made from plot selections, notably old vines with low yields planted on clay-limestone soils dating from the Triassic period with a high proportion of gravel.
The wine
2022 is the first certified Biological Agriculture vintage.
The vintage
After a harsh winter, with a few isolated storms, spring brought a wave of frost and hail which fortunately spared the estate's vineyards. The summer saw more than three months of heat and was relatively dry.
Winemaking and ageing
The grapes were delicately pneumatically pressed before the juice was separated. Vinification took place in stainless steel tanks at a temperature. Fermentation was followed by a light racking in order to work only the lees of top quality, to favour the expression and the aromatic potential of this wine throughout its evolution.

Tasting
Colour
The wine has a subtle, very pale lychee pink colour.
Nose
The nose is complex, developing with finesse white fleshed fruit, citrus and white flower notes.
Palate
Fine and silky, the palate is delicate to the fresh and saline finish.
Food and wine pairing
This Château Peyrassol rosé 2022 pairs perfectly with fish (ceviche or grilled) and white meats.
Storage
This rosé can be enjoyed today, and can be laid down until 2024.
