Tasting
Color
Beautiful very pale lychee pink hue.
Nose
This rosé reveals a fine and complex nose, marked by aromas of white-fleshed fruits, citrus and white flowers.
Palate
The palate, straight and silky, combines delicacy, vivacity and elegance. The finish, fresh and salivating, is supported by a controlled volume and a saline touch that balances the whole.
The structure and freshness of a Côtes de Provence rosé wine
The property
Founded by the Order of the Templars in the 13th century and then bequeathed to the Order of the Knights of Malta, the Domaine Peyrassol has become a reference over the vintages in the production of great wines from the Côtes de Provence.
In 2001, Philippe Austruy bought the estate and thus perpetuates its ancestral history. This enthusiast began major restructuring work on the vineyard and modernization of the winemaking facilities in 2002, in order to excel in the production of cuvées revealing the quality of their terroir. Vines conducted in Organic Agriculture, sowing of cereals in the inter-rows, development of soil life, parcel selection, manual harvest on the oldest plots... so much care given to the vineyard to get the best out of it.
The vineyard
Château Peyrassol rosé is a Côtes de Provence wine made from parcel selections, notably old vines with low yields planted on Triassic clay-limestone soils with a high proportion of pebbles.
The vintage
The 2024 vintage began with a harsh and rainy winter, providing the vine with ideal water reserves. Despite a cold snap in April, the summer conditions, warm but not excessive, allowed for homogeneous maturation. The harvest, which began at the end of August, delivered sunny juices balanced by a beautiful acidity. The September rains revived the berries, revealing freshness and aromatic complexity. This vintage promises to be elegant, marked by a great diversity of parcels.
Vinification and aging
The grapes undergo a gentle pneumatic pressing before juice separation. Vinification in stainless steel tanks at temperature. The fermentations are followed by a light racking in order to work only with the lees of optimal quality, to promote the expression and aromatic potential of this cuvée throughout its evolution.
